WOOD SMOKIN' TIPS

When smoking, only hardwoods are used. Never use woods such as Fir or Pine as the resins present in the sap will impart an undesirable taste to your foods.

True North offers several varieties of wood chips & bits including Alder, Apple, Cherry, Hickory, Maple and Mesquite. You can experiment and mix in combinations, or use them on their own.

Although you can use True North Bits & Chips interchangeably, True North Wood Bits are chipped into smaller pieces and are perfect for use in most electric smokers (the smaller pieces create more smoke). True North Wood Chips are processed into larger pieces of wood and are better for use in BBQs (appropriate for both Charcoal and Gas Grills).

Remember, chips should be dry prior to use. Generally, when smoking, 2 to 3 panfuls is usually all that is required. Again this is personal preference and we recommend experimenting with your own combinations!
